400 gr. noodles with cuttlefish ink
1 octopus about 1 kg
1 chopped onion
2 cups fresh tomato juice
1 glass of white dry wine
1 tablespoon petimezi
2 bay leaves
extra virgin olive oil
salt, pepper
Implementation
Clean and wash the octopus well. Place it in a saucepan, without any water, on low heat, covered, for about 40 minutes until soft. Once it is done, chop it finely and in a second pot heat the olive oil, sauté the onion, add the octopus, turn it on all sides to brown it and extinguish it with the wine. Wait 2-3 ‘for the alcohol to evaporate, add the tomato, the petimezi, the bay leaves and let the sauce cook for about 15-20’. At the same time, boil the noodles in salted water for 6 ‘, drain it and throw it in the pot with the octopus, where we let it boil for another 2’. Remove the bay leaves, add freshly ground pepper and serve.
