A light recipe with raw olive oil and dietary tuna.
For 4 people
Materials
1 pack of screws
2 cups fresh tomato juice
1 chopped onion
240 gr. Alonissos tuna in water (or any other canned tuna)
about 15 reed olives, pitted, sliced
2 tablespoons chopped parsley
A little hot red pepper
salt, pepper
extra virgin olive oil
Implementation
Place a pan with a thick bottom on the fire. Once heated, add the chopped onion and steam it. If we see that it sticks before it withers, we can add 1 tablespoon of water. Then add the tomato, salt, pepper, hot pepper and let the sauce cook for about 10-15 ‘. When the sauce is almost ready, add the tuna, dissolving it with a fork, and the olives. Stir, add a little olive oil and remove from the heat.
At the same time in a saucepan with salted water boil the screws for 10 ‘. Once they are ready, drain them, pour 4 tablespoons of olive oil over them, mix them and put them in a deep bowl. Pour over the sauce, add parsley, freshly ground pepper and serve.
tips: The screws are not very sensitive due to their shape, which allows us to prepare them much earlier than the serving time, without degrading their taste.
